Prep Time: 20 minutes
Cook Time: 45 minutes
Total Time: 1 hour 5 minutes
Servings: 6
Ingredients
- 1 kg beef sirloin or tenderloin, thinly sliced
- 1/2 cup soy sauce
- 1/4 cup vinegar (cane or white)
- 1/4 cup brown sugar
- 6 cloves garlic, minced
- 1 tsp ground black pepper
- 3 cups cooked white rice (preferably day-old)
- 6 eggs
- 6 cloves garlic, minced (for rice)
- 3 tbsp cooking oil (for frying beef and rice)
- Salt to taste
- Sliced tomatoes (optional, for serving)
Instructions
- In a bowl, combine soy sauce, vinegar, brown sugar, minced garlic (6 cloves), and black pepper. Add the sliced beef and marinate for at least 30 minutes (or overnight for deeper flavor).
- Heat 1 tbsp oil in a pan over medium heat. Remove beef from the marinade (reserve marinade) and fry until caramelized and cooked through, about 3-4 minutes per side. Set aside.
- In the same pan, add the reserved marinade and simmer until thickened, about 5 minutes. Pour over the cooked beef.
- For the garlic fried rice, heat 2 tbsp oil in a separate pan. Sauté minced garlic (6 cloves) until golden. Add the cooked rice and stir-fry until heated through. Season with salt to taste.
- Fry the eggs sunny-side up or to your preference.
- Serve the beef tapa, garlic fried rice, and fried eggs together. Garnish with sliced tomatoes if desired.
Tips & Notes
- Use day-old rice for the garlic fried rice to prevent it from becoming mushy.
- For a tangier flavor, add a splash of calamansi juice to the marinade.
- Slicing the beef thinly ensures it cooks quickly and absorbs the marinade well.
